Popular Mexican restaurants such as El Parian, Birrieria Chalio (whose late owner was a relative of Amparo), and others catered to Mexicans from Jalisco and Zacatecas by providing regional goat birria and all-day antojito and combo plate menus.
Silverio of Birrieria Nochistlán rejected the desire to extend the menu, preferring to keep it traditional. For the first year, they only cooked birria on weekends, as is customary in Mexico’s North Central region.
